Reuben Casserole

Classic Reuben sandwich flavors in casserole form — well-drained sauerkraut layered with chipped corned beef, Thousand Island dressing and Swiss cheese, topped with buttered rye bread cubes.

  • 32 oz sauerkraut, very well drained
  • 1 lb deli-style corned beef, chipped
  • 4 oz Thousand Island dressing (half an 8-oz bottle)
  • 1 lb Swiss cheese, sliced
  • 12 slice rye bread, buttered and cut into 1-inch pieces

Instructions

    Preheat oven to 350°F.

    In a 13x9x2-inch casserole, layer the squeezed-dry sauerkraut, corned beef, Thousand Island dressing and Swiss cheese.

    Top with the buttered rye bread cubes.

    Bake uncovered for 45 minutes. Let cool slightly to set before serving.
