Red Swiss Chard with Bacon

  • 10 or so stalkes of red Swiss chard
  • 1 small onion
  • 1 tsp balsamic vinegar
  • 3 or 4 slices of bacon
  • black pepper to taste

Instructions

    Chop the bacon into small pieces and render in a skillet over low heat.

    When nearly crisp add diced onion and black pepper.

  3. 3

    Gather and chop the chard stalks into 1/2" long pieces and the leaves into 1/2" wide strips.

    When the onion is translucent add chard.

  5. 5

    Cook the chard until tender stirring several times.

  6. 6

    Add vinegar and toss.

  7. 7

    Serve hot.
