Red Potatoes and String Beans

  • 2 0.5 lb red potatoes
  • 2 lb frozen string beans, thawed
  • 1 lb red onions
  • 4 oz olive oil
  • 3 oz white wine vinegar
  • 1 tsp salt and pepper to taste

Instructions

    Cook red potatoes in boiling salted water for about 15 to 20 minutes or until soft. Drain and cool in refrigerator for 1 hour.

    Bring water to a boil, add string beans, and cook for 3 minutes. Drain and cool in refrigerator.

    Peel onions, cut in half, and slice into 1/4-inch strips.

    Combine cooled potatoes, string beans, and onions in a large bowl.

    Whisk together olive oil and white wine vinegar as dressing; pour over all.
