Red Lobster Fried Catfish & Hushpuppies
Copycat Red Lobster Southern fried catfish fillets with crispy cornmeal coating, served with savory hushpuppies fried in the same oil.

- 4 whole catfish fillets (8 oz each)
- 1 cup milk
- 1 cup cornmeal, for fish
- 1 cup cornmeal, for hushpuppies
- 2 tbsp baking powder
- 0.3 cup minced onion
- 1 whole egg, beaten
- 0.3 cup milk for hushpuppies

Rinse and pat catfish dry. In a shallow dish, mix milk, salt, pepper, and paprika. Dip fish in milk mixture, then roll in cornmeal. Set on waxed paper to dry.

Heat 1.5 inches of vegetable oil to 350°F. Deep fry fish, turning once, until golden brown. Drain on paper towels and keep warm.

For hushpuppies: mix cornmeal, baking powder, salt, pepper, white pepper, and minced onion. Combine beaten egg with milk; stir into dry ingredients.

Drop tablespoons of batter into hot oil; fry until golden brown. Drain on paper towels.
