Red Lobster Crab Au Gratin

- 8 tbsp butter
- 0.5 cup minced onion
- 2 tbsp all-purpose flour
- 1 cup milk, scalded
- 0.5 tsp salt
- 0.3 cup dry sherry
- 12 oz crab meat
- 1 cup crackers, finely crumbled
- 0.5 cup grated Cheddar cheese

Preheat oven to 350°F. Crumble crackers; reserve half the crumbs and half the cheese for topping.

Melt 4 tablespoons butter in a heavy skillet. Add onion and sauté about 5 minutes until golden.

Slowly stir in flour, stirring constantly over low heat.

Gradually add hot scalded milk, blending with a whisk. Stir until the sauce thickens.

Add salt, sherry, remaining cracker crumbs, and cheese. Mix in crab meat.

Place in a lightly greased baking dish. Top with reserved crumbs and cheese.
