Red-Eye Shrimp and Grits

- 1 tbsp olive oil
- 4 oz country ham or smoked ham, chopped
- 8 oz fresh mushrooms, sliced
- 0.5 tsp seasoning salt
- 0.5 tsp dried thyme
- 0.5 cup green onions, chopped
- 2 tsp garlic, minced
- 1 cup strong brewed coffee
- 0.3 cup dry sherry
- 1 tbsp cornstarch
- 1 tsp hot pepper sauce, or to taste
- 1 lb medium shrimp, peeled and deveined
- 4 cup cooked cheese grits, for serving

Sauté ham in olive oil in a large saucepan over medium-high heat until golden, about 3 minutes.

Add mushrooms, seasoning salt and thyme; sauté until mushrooms are golden, about 3 to 5 minutes.

Add green onions and garlic and sauté 3 minutes more.

Whisk together coffee, sherry, cornstarch and hot sauce in a small bowl until smooth.

Pour coffee mixture into the sauté pan and bring to a simmer, stirring until slightly thickened.

Add shrimp and simmer until just cooked through, about 2 minutes.

Spoon grits onto dinner plates and divide the red-eye shrimp mixture over the top.
