Red Chicken Curry

- 1 tbsp garam masala
- 2 tsp ground turmeric
- 3 tsp red chile powder
- 2 tbsp paprika
- 4 lb chicken, cut into 10 pieces
- 0.3 cup vegetable oil
- 2 cup yellow onion, chopped
- 1 tsp salt
- 0.5 tsp black pepper
- 2 tsp garlic, chopped
- 1 cup fresh tomatoes, peeled, seeded, and chopped
- 2 tsp fresh ginger, grated
- 3 cup chicken stock
- 2 cup cooked white rice, for serving

In a small bowl, combine the garam masala, turmeric, chile powder, and paprika. Mix well.

Season the chicken pieces with salt and the spice blend. Set aside.

In a large sauté pan, heat the oil over medium heat. When hot, add the chicken and brown for 3 to 4 minutes on each side. Remove and set aside.

Add the onions to the pan. Season with salt and pepper. Sauté for 4 minutes or until soft.

Add the garlic, tomatoes, and ginger. Continue to sauté for 1 minute.

Add the chicken stock and reserved chicken pieces. Bring to a boil. Cover, reduce heat to medium-low, and simmer for 25 to 30 minutes until the chicken is tender.

Season to taste and serve over white rice.
