  • 1 cup (240 ml) water
  • 6 tablespoons (90 g) unsalted butter, room temperature
  • juice of ½ lemon
  • 1 tablespoon fresh lemon juice
  • ¼ teaspoon salt

Instructions

    In a small saucepan, heat the water to just below boiling.

    Remove from heat and add the butter, one tablespoon at a time, stirring constantly until melted and emulsified.
