Raisin and Rosemary Eggy Bread

  • 4 medium eggs
  • 4 tbsp sugar
  • 6 bananas, peeled and sliced lengthways
  • 25 g butter
  • 8 slice of raisins and rosemary bread

    Beattogethertheeggs.Getafrying pan,placeovera moderate heatandputin a knob of butter and 4 tablespoons sugar and swirl until melted and beginning to bubble. Throw in the bananas. Cook for 3 - 4 minutes turning halfway, until golden. In another pan melt 25g butter. Dip 8 slices raisin and rosemary bread into the egg mix and cook in a pan for 2 minutes each side. Serve with spoonfuls of crème fraiche, banana syrup and more bananas.
