  • 1 cup (60 g) fresh basil leaves
  • 1/3 heaping cup (60 g) raw almonds, soaked in
  • 1/3 cup (25 g) fresh parsley leaves and stems
  • 1 small clove garlic
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1½ teaspoons lemon juice
  • 1/8 tsp finely ground sea salt
  • 20 medium radishes (about 3¼ oz/90 g), thinly

Instructions

    Place all the ingredients for the pesto in a food processor or high-powered blender. Blend on high until smooth. Transfer the pesto to a serving bowl. Place the sliced radishes on a plate and serve.
