Quick Cheesy Chicken-Corn Chowder

A quick and creamy chicken and corn chowder made with condensed cream of chicken soup, corn, American cheese, and pimiento.

  • 1 whole small chicken breast
  • 0.3 cup chopped onion
  • 0.3 cup chopped celery
  • 10 0.8 oz can condensed cream of chicken soup
  • 8 0.8 oz can whole kernel corn
  • 0.5 cup milk
  • 0.5 cup shredded American cheese
  • 2 tbsp chopped pimiento

Instructions

    In a saucepan, combine chicken, onion, celery, and 1/4 cup water. Bring to a boil, reduce heat. Cover and simmer 15-20 minutes.

    Remove chicken; when cool, cut off meat and chop. Return meat to broth.

    Stir in remaining ingredients. Cook uncovered for 10 minutes.
