Quick Cajun Skillet
Fast Cajun rice skillet with turkey kielbasa, bell pepper, onion, seasoned tomatoes, kidney beans and Cajun spice. A complete one-pan dinner in under 30 minutes.
Ingredients
- 1 cup long-grain rice
- 1 tsp vegetable oil
- 1 large onion, coarsely chopped
- 1 large green bell pepper, bite-size pieces
- 8 oz turkey kielbasa
- 2 tsp minced garlic
- 1 tsp Cajun-style seasoning blend
- 14 0.5 oz canned diced seasoned tomatoes
- 8 oz no-salt added tomato sauce
- 15 oz canned red kidney beans, drained

Bring 2 cups unsalted water to a boil in a 2-quart saucepan. Add rice, cover, reduce heat to low and simmer 17 minutes.

Heat oil in extra-deep 12-inch nonstick skillet over medium. Add onion. Cut bell pepper into bite-size pieces; add to skillet.

Cut kielbasa in half lengthwise, then into 1/4-inch slices; add to skillet. Raise heat to medium-high.

Cook, stirring frequently, 2 minutes until onions are tender and begin to brown. Add garlic and Cajun seasoning.

Stir in tomatoes and tomato sauce. Reduce heat to medium-low. Add drained beans; stir and simmer until beans are hot.

Serve over hot steamed rice.
