Quiche-Stuffed Peppers
Colorful red and green bell peppers filled with a creamy quiche-style filling of ham, feta cheese, eggs and half-and-half, microwave-baked until just set. Elegant and quick.
Ingredients
- 2 large red bell peppers
- 2 large green bell peppers
- 2 tbsp butter or margarine
- 1 medium onion, chopped
- 0.3 lb boiled ham, chopped
- 2 tbsp all-purpose flour
- 0.3 tsp dried oregano
- 0 dash of pepper
- 1 cup half-and-half
- 2 large eggs
- 3 oz crumbled feta cheese, divided

Carefully remove stem with about an inch of surrounding pepper from each pepper. Chop 2 tablespoons of this; set aside.

Remove and discard ribs and seeds. Stand each pepper in a microwave-safe muffin pan.

Microwave butter on HIGH 30 seconds. Add chopped pepper, onion and ham; microwave on HIGH 3 minutes until onion is tender.

Stir in flour, oregano and pepper. Gradually stir in half-and-half; beat in eggs. Stir in 1/3 cup feta.

Spoon into pepper cups. Microwave on HIGH 4 minutes. Sprinkle with remaining feta.

Microwave on MEDIUM 10-12 minutes, rotating a quarter turn every 3 minutes, until just set.
