Quebec Pea Soup

  • 2 cup dried white pea beans or split peas
  • 2 tbsp butter
  • 0.5 cup chopped onion
  • 0.3 cup chopped leek, white part
  • 2 whole smoked ham hocks
  • 8 cup water
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp dried herbs (thyme, marjoram, savory)

Instructions

    Soak dried beans overnight. Drain and rinse.

    In a large pot, melt butter and sauté onion and leek until softened.

    Add soaked beans, ham hocks, water, salt, pepper, and dried herbs.

    Bring to a boil, then reduce heat and simmer for 1½ to 2 hours until beans are completely tender.

    Remove ham hocks; strip meat from bones and return meat to the soup.

    Mash some of the beans to thicken the soup. Adjust seasoning and serve hot with crusty bread.
