Puttin' on the Ritz Scallops

Bay scallops layered in a cream of mushroom soup sauce with herbed Ritz cracker crumbs — an easy, comforting scallop bake.

  • 1 lb bay scallops
  • 0.3 lb Ritz crackers
  • 0.8 tsp garlic powder
  • 0.8 tsp dried oregano
  • 0.8 tsp dried thyme
  • 10 0.5 oz cream of mushroom or cream of celery soup
  • 0.7 cup milk
  • 0.5 tsp paprika

Instructions

    Preheat oven to 375°F. Mix soup and milk in a 9-inch round dish; set aside.

    Break 1/3 of crackers into pieces; mix with 1/3 of the spice blend. Coat half the scallops and place in dish.

    Repeat with remaining scallops.

    Crumble remaining crackers finely; mix with remaining spices. Sprinkle over top. Dust with paprika. Bake 20 minutes.
