- 1 cup rolled oats
- 2 cups unsweetened almond milk
- 1 tsp pumpkin pie spice
- 1/4 cup pumpkin puree
- 1 tbsp maple syrup
- 1/2 tsp vanilla extract
- 1/2 cup Greek yogurt
- 1/4 cup mini chocolate chips (optional)
- 1/4 cup chopped pecans (optional)

In a medium bowl, mix together the rolled oats, pumpkin pie spice, and maple syrup.

Add in the almond milk and stir until well combined. Let sit for at least 5 minutes to absorb the liquid.

Stir in the pumpkin puree and vanilla extract. Mix well.

Divide the mixture into two small bowls or containers. Top each with Greek yogurt, mini chocolate chips (if using), and chopped pecans (if using).
