Pumpkin Soup

- 1 can (29 oz) pumpkin puree
- 3 cup vegetable broth
- 1 cup heavy cream
- 1 cup onion, diced
- 2 clove garlic, minced
- 2 tbsp butter
- 1 tsp ground cinnamon
- 0.5 tsp ground nutmeg
- 0.5 tsp ground ginger
- 1 tsp salt
- 0.3 tsp white pepper
- 2 tbsp brown sugar
- 0.3 cup sour cream (for garnish)

In a large pot, melt butter over medium heat. Add onion and garlic; sauté until softened, about 5 minutes.

Stir in pumpkin puree, vegetable broth, cinnamon, nutmeg, ginger, salt, white pepper, and brown sugar.

Bring to a simmer and cook 15 minutes, stirring occasionally.

Use an immersion blender (or transfer in batches to a blender) to purée until smooth.

Stir in heavy cream and return to a gentle simmer for 5 minutes.

Taste and adjust seasoning. Serve garnished with a dollop of sour cream and a sprinkle of nutmeg.
