Pumpkin Raisin Cake

- 2 cups of sugar
- 2 cups of flour
- 3/4 cup of vegetable oil
- 1 teaspoon of salt
- 1 teaspoon of ground cinnamon
- 1 – 8 ounce can of crushed pineapple, drained
- 2 cups of pumpkin
- 1 cup of raisins
- 4 eggs
- 1 teaspoon of baking powder
- 2 teaspoons of baking soda
- 1 teaspoon of allspice
- 2 teaspoons of vanilla
- 1 cup of chopped pecans

Combine the sugar, pumpkin, vegetable oil, and the eggs and mix well.

Combine the dry ingredients and the spices and add to the pumpkin mixture and beat for 1 minute at medium speed.

Stir in the pineapple, raisins, pecans and the vanilla.

Pour the batter into a 9 X 13 inch baking pan and bake at 350 degrees for 55 minutes.

Allow the cake to cool for 10 minutes in the pan then remove it from the pan as frost after cake is completely cooled.
