Pumpkin Muffins

  • 2 cups of sifted flour
  • 1 tablespoon of baking powder
  • 1 teaspoon of salt
  • 1/4 teaspoon of cinnamon
  • 1/4 teaspoon of nutmeg
  • 1/4 teaspoon of ginger
  • 1/4 teaspoon of allspice
  • 1/4 cup of brown sugar
  • 1/2 cup of raisins
  • 1 egg, well beaten
  • 1/2 cup of milk
  • 3/4 cup of cooked pumpkin
  • 1/4 cup of molasses
  • 1/3 cup of melted shortening
  • 1/2 cup of chopped pecans

Instructions

    Sift the flour, baking powder, salt, and the four spices.

    Stir in the brown sugar, raisins, and the pecans.

    Mix together the egg, milk, pumpkin, molasses, and the melted shortening.

    Add the pumpkin mixture to the dry ingredients and stir until just moistened.

    Fill greased muffin tins 2/3 full

  6. 6

    Bake at 400 degrees for 25 minutes.
