Pudim De Laranja (Orange Flan In Caramel Sauce)

  • 1 0.3 cup sugar
  • 1 tbsp fresh lemon juice
  • 1 count juice from one orange
  • 3 count eggs
  • 1 cup heavy cream

    Preheat oven to 350°F. In a heavy saucepan over medium heat, combine 1 cup sugar and lemon juice. Cook stirring for about 10 minutes until sugar dissolves and turns golden brown. Spoon 1 tablespoon caramel into each of 4 (6-oz) custard cups.

    In a bowl, whisk together remaining ¼ cup sugar, orange juice, eggs, and cream until well combined.

    Divide the custard mixture among the caramel-lined cups. Place cups in a baking pan; fill pan with water to reach ¾ up the sides of the cups.

    Bake for 45 minutes to 1 hour until custard is set and a knife inserted comes out clean. Cool completely, then refrigerate at least 4 hours.

    To serve, run a thin knife around the edges of each cup. Invert onto chilled dessert plates to release the caramel sauce.
