Potatoes Au Gratin

- 3 tbsp unsalted butter, divided
- 2 tbsp all-purpose flour
- 2 cup whole milk
- 0.5 tsp salt, to taste
- 0.3 tsp freshly ground white pepper
- 1 0.5 lb new red potatoes, cooked and sliced ½ inch thick
- 3 oz sharp Cheddar cheese, grated
- 3 oz Monterey Jack cheese, grated

Preheat the oven to 400°F (200°C). Grease an 8-cup rectangular baking dish with 1 tablespoon of the butter.

In a saucepan over medium heat, melt the remaining 2 tablespoons butter. Stir in the flour and cook for 2 minutes. Whisk in the milk and cook, stirring, until slightly thick and coating the back of a spoon, about 4 to 6 minutes. Season with salt and pepper.

In a bowl, toss the cooked potato slices with salt and pepper. Fold in the cream sauce. Pour into the prepared baking dish.

Sprinkle the top evenly with the grated Cheddar and Monterey Jack. Bake until golden-brown and bubbly, about 8 to 10 minutes.

Cool for a couple of minutes before serving.
