Potato Stuffing

- 2 cup hot mashed
- 1/3 cup butter
- 2 0.8 cup soft stale
- 0.3 cup finely chopped
- potato
- bread crumbs
- 1 egg
- fat salt pork
- 11/2 teaspoons
Instructions

Melt butter in a skillet over medium heat.

Add diced onion and celery, and sauté for a few minutes until the onion is soft.

Place the cooled mashed potatoes into a large bowl, and stir in the beaten egg.

Gently fold in cubed bread, then season to taste with salt and pepper.

Place potato mixture into a baking dish and cover.

Bake covered in oven for 45 minutes.
