Potato Soup (Kartoffelsuppe)

A classic German potato soup blended smooth and served with buttery croutons and fresh chives.

  • 2 whole medium onions, diced
  • 1 bunch soup vegetables (carrot, leek, parsley)
  • 0.5 oz margarine
  • 8 0.8 oz potatoes, peeled and diced
  • 2 cup vegetable stock
  • 0 to taste salt and pepper
  • 0 to taste dried basil
  • 1 whole bread roll, cut into cubes
  • 0.5 oz butter
  • 2 tbsp fresh chives, finely chopped

Instructions

    Sauté onions and soup vegetables in margarine until softened.

    Add diced potatoes and stock. Bring to a boil and simmer until everything is tender, about 20 minutes.

    Pass the soup through a sieve or blend until smooth.

    Reheat and season with salt, pepper, and basil.

    Fry bread roll cubes in butter until golden brown to make croutons.

    Serve the soup sprinkled with croutons and chopped chives.
