Potato Salad with Beer Dressing
A German-style warm potato salad with crumbled bacon, onion, and celery tossed in a hot beer dressing with mustard, a touch of sugar, and Tabasco.

- 6 medium potatoes
- 4 slice bacon
- 1 tbsp onion, chopped
- 1 celery stalk, chopped
- 1 tsp salt
- 2 tbsp butter
- 2 tbsp unbleached flour
- 0.5 tsp dry mustard
- 1 tbsp sugar
- 1 cup beer
- 0.5 tsp Tabasco hot pepper sauce
- 2 tbsp fresh parsley, chopped

Boil potatoes until just tender. Peel and slice. Fry bacon until crisp; crumble and mix with onion, celery, and salt.

Stir melted butter and flour in a saucepan until blended. Add mustard and sugar. Slowly stir in beer and Tabasco; bring to a boil, stirring constantly.

Pour hot dressing over sliced potatoes. Sprinkle with bacon mixture and parsley. Serve warm.
