Potato Leek Soup

Classic potato leek soup — leeks gently softened in olive oil, simmered with cubed potatoes in chicken stock, then blended silky smooth.

  • 3 whole leeks, trimmed and cleaned, chopped crosswise
  • 4 whole potatoes, cubed to 1/2-inch blocks
  • 2 tbsp olive oil
  • 4 cup chicken stock
  • 1 pinch white pepper and salt to taste

    In a large stock pot, heat olive oil and cook leeks gently until soft.

    Add potatoes. Season with white pepper and add stock to cover; bring to a simmer.

    Ladle stock and potatoes into a blender in several batches; blend until smooth.

    Return blended soup to pot. Adjust seasoning and consistency with salt, pepper, or reserved potato water.

    Serve hot in winter, or cold in summer with dollops of yogurt and extra white pepper.
