Potato And Goat Cheese Gratin

  • 2 cup heavy cream
  • 3 egg yolks
  • 0.5 tsp salt, to taste
  • 0.3 tsp freshly ground white pepper
  • 1 0.5 lb Idaho potatoes, peeled and thinly sliced vertically
  • 1 lb fresh goat cheese, crumbled
  • 1 tbsp unsalted butter, for the dish

Instructions

    Preheat the oven to 400°F (200°C). Butter a square baking dish.

    Whisk together the heavy cream and egg yolks; season well with salt and white pepper.

    Lay a layer of the potato slices over the bottom of the prepared dish. Season with salt and pepper. Crumble about 2 tablespoons of goat cheese over the potatoes. Ladle about ½ cup of the cream mixture over the top.

    Continue layering potatoes, goat cheese, and cream mixture, pressing the layers firmly together with your hands after each addition. Finish with cream mixture on top.

    Cover with parchment and then foil. Bake for 30 minutes covered. Remove the foil and bake for another 15 minutes until golden and bubbling. Cool completely before slicing, then reheat individual portions to serve.
