  • 1 1/4 lb Potatoes (3 or 4)
  • 1/2 ts Salt
  • 2 tb Butter, melted
  • 4 ts Vegetable oil
  • 1 c Flour, all purpose

Instructions

  1. 1

Peel and halve potatoes; put in large saucepan with enough water to cover.

  2. 2

Bring to boil; simmer, covered, 20 to 30 minutes, until fork-tender.

  3. 3

Drain well; return to saucepan over low heat. Add butter; mash potatoes well.

  4. 4

    Stir in flour and salt.

  5. 5

Gather mixture into a ball; turn onto lightly floured surface. Knead lightly until smooth.

  6. 6

  7. 7

Cut into quarters; set aside. Repeat with remaining dough.

  8. 8

In large nonstick skillet, heat half the oil over medium-high heat.

  9. 9

Cook dough quarters in batches, 2 minutes on each side or until golden brown, adding more oil as necessary.

  10. 10

    Serve warm.
