  • 6 slices thick cut bacon
  • 2 russet potatoes, cut into 1/2 inch chunks
  • 1 yellow onion, chopped
  • 1 red bell pepper, chopped
  • 1 clove garlic, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Tabasco sauce

    Set your griddle to medium heat and cook the bacon until just crispy.

    Add the potato, onion, and bell pepper to the griddle and cook until the potato has softened. Use the large surface of the griddle to spread out the ingredients.

    When the potato has softened, add the garlic, salt, and pepper.

    Chop the bacon into small pieces and add it to the griddle. Stir the mixture well and add the hot sauce right before removing the hash from the griddle. Servings immediately.
