Portuguese Rice And Salt Cod Salad
A traditional Portuguese salad of sautéed salt cod with caramelized onions, tomatoes, and herbs folded into cooked rice with hard-boiled eggs and green olives.

- 3 tbsp Portuguese olive oil
- 2 cup chopped yellow onions
- 2 tbsp chopped garlic
- 1 cup chopped green onions
- 2 tbsp finely chopped fresh parsley
- 3 medium tomatoes, seeded and chopped
- 1 tbsp crushed red pepper
- 2 lb salt cod, soaked, rinsed, patted dry and julienned
- 1 lb cooked long-grain white rice
- 1 lemon juiced
- 0.5 head iceberg lettuce
- 6 eggs hard-boiled
- 6 oz queen-stuffed green olives

In a large sauté pan, heat the oil. Add onions, season with salt and pepper, and sauté until golden, about 3–4 minutes.

Add garlic, green onions, parsley, and tomatoes. Cook 2–3 minutes until tomatoes soften.

Add crushed red pepper and salt cod. Cook 3 minutes, stirring constantly. Remove from heat.

Transfer to a mixing bowl. Add cooked rice and lemon juice, then mix thoroughly. Drizzle in enough olive oil so the rice is not dry. Re-season to taste.

Lay lettuce on a platter. Spoon the rice salad on top. Garnish with hard-boiled eggs and green olives.
