Portuguese Garlic Chicken (Crockpot)

Whole chicken slow-cooked on a bed of garlic, tomatoes, ham, and golden raisins in port wine and brandy, finished with a golden broil.

  • 1 medium onion, thinly sliced
  • 6 clove garlic, thinly sliced
  • 2 medium pear-shaped tomatoes, seeded and chopped
  • 0.3 cup baked ham, chopped
  • 0.5 cup golden raisins
  • 3 lb whole chicken
  • 0.5 cup Port wine
  • 0.3 cup brandy
  • 1 tbsp Dijon mustard
  • 2 tbsp tomato paste

    In slow cooker, combine onion, garlic, tomatoes, ham, and raisins.

    Rinse chicken inside and out, pat dry. Tuck wingtips under; tie drumsticks together. Place on top of onion mixture.

    Mix port, brandy, mustard, and tomato paste; pour over chicken.

    Cover; cook at LOW until meat near thighbone is very tender, 7.5–8 hours.

    Lift chicken to broiler rack; broil 4–6 inches from heat until golden brown, about 5 minutes. Transfer to warm platter.

    Skim fat from cooking liquid; blend in cornstarch-water mixture. Increase to HIGH; cook, stirring, until sauce thickens.

    Stir in red wine vinegar. Season with salt. Spoon sauce over chicken. Garnish with parsley and tomato wedges.
