Portuguese Garlic Chicken

- 1 medium onion, thinly sliced
- 6 clove garlic, thinly sliced
- 2 medium plum tomatoes, seeded and chopped
- 1/3 cup baked ham, chopped
- 0.5 cup golden raisins
- 3 0.5 lb whole chicken
- 0.5 cup port wine
- 0.3 cup brandy
- 1 tbsp Dijon mustard
- 2 tbsp tomato paste
- 1 0.5 tbsp cornstarch mixed with 2 tbsp cold water
- 1 tbsp red wine vinegar

In the slow cooker, combine onion, garlic, tomatoes, ham and raisins.

Rinse chicken inside and out and pat dry. Tuck wingtips under and tie drumsticks together. Place on top of onion mixture.

Whisk together port wine, brandy, Dijon mustard and tomato paste; pour over chicken.

Cover and cook on LOW until meat near thighbone is very tender, about 7½ to 8 hours.

Carefully lift chicken to a broiler rack. Broil 4 to 6 inches from heat until golden brown, about 5 minutes. Transfer to a warm platter.

Skim fat from cooking liquid. Stir in cornstarch mixture. Switch to HIGH and cook, stirring, until sauce thickens.

Stir in red wine vinegar; season with salt. Carve chicken and serve with the sauce.
