Portuguese Boiled Dinner

A festive Portuguese one-pot boiled dinner featuring beef, pork loin, chicken, hot Italian sausage, chorizo, and bacon simmered with root vegetables and served over saffron rice.

  • 1 lb beef round
  • 1 0.5 lb pork loin
  • 2 0.5 lb fryer chicken
  • 1 lb hot Italian sausage
  • 0.5 lb chorizo
  • 0.3 lb bacon, in one piece
  • 2 bouquet garni
  • 4 whole bay leaves
  • 2 quart water
  • 4 turnips peeled and quartered
  • 3 carrots peeled and chopped
  • 1 lb new potatoes, quartered
  • 1 small cabbage, cut into wedges
  • 0.3 cup chopped parsley
  • 4 cup cooked saffron rice

    In a large saucepan, combine beef, pork, chicken, sausage, chorizo, bacon, bouquet garni, bay leaves, and water. Season with salt and pepper.

    Bring to a boil, then reduce to a simmer. Cook for about 1½ hours, or until the meats are tender.

    Remove the meats from the pan and set aside. Add turnips, carrots, and potatoes to the broth. Bring back to a boil, then simmer 20 minutes.

    Add cabbage and continue cooking 30 minutes more.

    Slice beef, pork loin, sausage, and chorizo 1/2-inch thick. Dice the bacon and render until crispy in a hot sauté pan.

    About 5 minutes before cabbage is done, return all meats to the pot. Stir in parsley and re-season. Serve over saffron rice, garnished with crispy bacon.
