  • 2 lb pork roast, cut into chunks
  • 2 can hominy, drained
  • 2 pork shanks or pig's feet
  • 2 cloves garlic, mashed
  • 2 tbsp chopped onion
  • 4 dried red chili pods, seeds removed
  • 1 tsp dried oregano
  • 1 tbsp salt

Instructions

    Place meat and pork shanks in a large kettle with about 5 quarts water and salt. Bring to a boil; cook over medium heat 1½ hours.

    Remove excess grease. Wash hominy until water runs clear.

    Combine meat, hominy, and shanks; add oregano, garlic, onion, and chili pods.

    Simmer about 30 minutes more. Serve with hard rolls or tortillas and hot chili sauce to taste.
