Pork Chop-Rice Bake
Browned pork chops baked over seasoned rice with onion soup mix, mushrooms and their liquid — a simple one-dish wonder where the rice absorbs all the savory pork juices.

- 6 piece pork chops
- 2 tbsp oil
- 1 cup uncooked rice
- 0 hot water as needed
- 1 envelope onion soup mix
- 4 oz canned sliced mushrooms with juice

Brown pork chops in oil. Spread rice in bottom of a 13x9-inch baking dish.

Reserve 1 tablespoon of seasonings from soup mix. Sprinkle remaining seasonings and onion bits over rice.

Drain mushrooms, reserving liquid. Distribute mushrooms over rice. Add hot water to mushroom liquid to total 3 cups; pour over rice.

Arrange browned chops on top of rice; sprinkle with reserved seasonings.

Cover tightly with lid or foil; bake at 350°F for 45 minutes to 1 hour until just tender.

Remove lid and continue baking 10 minutes until excess liquid evaporates.
