Pork Carnitas

- 1 lb boneless center pork loin, cut into 2x1/4-inch strips
- 4 poblano chiles, roasted, peeled and cut into strips
- 1 medium onion, cut into strips
- 1 clove garlic, finely chopped
- 2 tsp vegetable oil
- 2 tsp tomato paste
- 1 tsp red wine vinegar
- 0.3 tsp salt
- 0.5 lb plum tomatoes, finely chopped
- 8 flour or corn tortillas for serving
- 0.5 cup sour cream for serving
- 1 cup guacamole for serving

Cook pork strips, chile strips, onion strips and garlic in oil in a 10-inch skillet over medium heat, stirring occasionally, until pork is no longer pink, about 12 minutes.

Stir in tomato paste, vinegar, salt and chopped tomatoes. Cook until everything is hot and well combined, about 2 minutes.

Serve with warm tortillas, guacamole and sour cream.
