Popeye's Spicy Fried Chicken

- 3 cup self-rising flour
- 1 cup cornstarch
- 3 tbsp seasoned salt
- 2 tbsp paprika
- 1 tsp baking soda
- 1 packet Italian salad dressing mix powder
- 1 packet onion soup mix
- 3 cup corn flakes, crushed
- 2 whole eggs, well beaten
- 0.3 cup cold water
- 4 lb chicken, cut up

Combine flour, cornstarch, seasoned salt, paprika, baking soda, Italian dressing mix, onion soup mix, and sugar in a large bowl.

Place crushed corn flakes in another bowl. Mix beaten eggs with cold water in a third bowl.

Heat corn oil in a heavy skillet to 1 inch depth. Get oil HOT. Grease a 9x12x2 baking pan.

Preheat oven to 350°F.

Dip each chicken piece: 1) In dry coating mix. 2) In egg-water mix. 3) In corn flakes. 4) Briefly back in dry mix.

Drop skin-side down into hot oil and fry until golden brown, about 2 to 3 minutes per side.

Transfer to greased baking pan and bake at 350°F for 30 to 35 minutes until cooked through.
