Popeye's Dirty Rice

- 1 cup long-grain white rice, uncooked
- 2 cup chicken broth
- 0.5 lb ground pork
- 0.5 lb chicken livers, finely chopped
- 0.5 cup onion, diced
- 0.5 cup green bell pepper, diced
- 0.3 cup celery, diced
- 2 clove garlic, minced
- 1 tsp Cajun seasoning
- 0.5 tsp dried thyme
- 0.5 tsp salt
- 0.3 tsp cayenne pepper
- 2 tbsp butter

Cook rice in chicken broth according to package directions; set aside.

In a large skillet over medium-high heat, cook ground pork until browned; drain fat.

Add chicken livers to the skillet and cook, stirring frequently, about 5 minutes until cooked through.

Add onion, bell pepper, celery, and garlic. Cook until vegetables are softened, about 5 minutes.

Stir in Cajun seasoning, thyme, salt, and cayenne pepper.

Add cooked rice and butter; stir to combine thoroughly over medium heat for 2–3 minutes.
