Popeye's Fried Chicken
Copycat Popeye's extra-crispy spiced fried chicken — coated in a seasoned breading of self-rising flour, cornstarch, spaghetti sauce mix, and crushed cornflakes, then fried and finished in the oven.
Ingredients
- 3 cup self-rising flour
- 1 cup cornstarch
- 3 tbsp seasoned salt
- 2 tbsp paprika
- 1 tsp baking soda
- 1 package Italian salad dressing mix powder
- 1 package onion soup mix (1½ oz)
- 1 package spaghetti sauce mix (½ oz)
- 3 tbsp sugar
- 3 cup corn flakes, crushed
- 2 count eggs, well beaten
- 0.3 cup cold water
- 4 lb chicken, cut up
- 4 cup corn oil, for frying

Combine self-rising flour, cornstarch, seasoned salt, paprika, baking soda, Italian dressing mix, onion soup mix, spaghetti sauce mix, and sugar in a large bowl. Set aside.

Place crushed corn flakes in a second bowl. Whisk eggs and cold water together in a third bowl.

Heat oil in a heavy skillet to about 350°F (175°C). Grease a 9×12 baking pan and set aside. Preheat oven to 350°F.

Dip each chicken piece in order: 1) dry coating mix, 2) egg-water mixture, 3) corn flakes, 4) briefly back into dry mix.

Drop into hot oil skin-side down. Fry until golden, turning as needed, about 6–8 minutes total.

Transfer fried pieces to the prepared baking pan. Bake at 350°F for 25–30 minutes until cooked through.
