Ingredients

Servings
6
  • 3 cup self-rising flour
  • 1 cup cornstarch
  • 3 tbsp seasoned salt
  • 2 tbsp paprika
  • 1 tsp baking soda
  • 1 package Italian salad dressing mix powder
  • 1 package onion soup mix (1½ oz)
  • 1 package spaghetti sauce mix (½ oz)
  • 3 tbsp sugar
  • 3 cup corn flakes, crushed
  • 2 count eggs, well beaten
  • 0.3 cup cold water
  • 4 lb chicken, cut up
  • 4 cup corn oil, for frying

Instructions

  1. 1

Combine self-rising flour, cornstarch, seasoned salt, paprika, baking soda, Italian dressing mix, onion soup mix, spaghetti sauce mix, and sugar in a large bowl. Set aside.

  2. 2

Place crushed corn flakes in a second bowl. Whisk eggs and cold water together in a third bowl.

  3. 3

Heat oil in a heavy skillet to about 350°F (175°C). Grease a 9×12 baking pan and set aside. Preheat oven to 350°F.

  4. 4

Dip each chicken piece in order: 1) dry coating mix, 2) egg-water mixture, 3) corn flakes, 4) briefly back into dry mix.

  5. 5

Drop into hot oil skin-side down. Fry until golden, turning as needed, about 6–8 minutes total.

  6. 6

Transfer fried pieces to the prepared baking pan. Bake at 350°F for 25–30 minutes until cooked through.
