Pop Tarts

Homemade copycat Pop Tarts — buttery pastry filled with fruit preserves, baked until golden, and drizzled with vanilla frosting.

  • 0.8 cup shortening
  • 0.8 cup sugar
  • 3 each eggs
  • 3 0.8 cup flour
  • 3 tsp baking powder
  • 0.5 cup fruit preserves
  • 0.5 cup powdered sugar (for frosting)
  • 0.5 tsp vanilla (for frosting)
  • 2 tbsp milk (for frosting)

Instructions

    Preheat oven to 350°F.

    In mixer or food processor, cream shortening and sugar together, then beat in eggs one at a time.

    Sift together flour and baking powder and stir into shortening mixture to make a soft dough.

    Chill dough for 1 hour.

    Turn dough out onto a floured surface and roll out 12 rectangles, each about 8 x 12 inches.

    Spread one tablespoon of preserves over half of each rectangle, staying well within the edge.

    Fold pastry dough over the preserves and trim edges with a pastry wheel or crimp with a fork to close.

    Place tarts on a greased cookie sheet and bake for 20 minutes. Let cool.

    Mix vanilla, milk, and powdered sugar until you have a thin frosting.

    Dribble frosting on cooled tarts.
