Pizzeria Uno's Chicago Deep Dish Pizza

- 1 cup warm water (110-115°F)
- 1 package active dry yeast
- 3 0.5 cup flour
- 0.5 cup coarse ground cornmeal
- 1 tsp salt
- 0.3 cup vegetable oil
- 1 lb mozzarella, sliced thin
- 1 lb Italian sausage, removed from casing and crumbled
- 1 can whole tomatoes, drained and coarsely crushed
- 2 clove garlic, peeled and minced
- 5 leaves fresh basil, chopped
- 4 tbsp Parmesan cheese, freshly grated

Dissolve yeast in warm water. Add 1 cup flour, all cornmeal, salt, and oil. Mix well. Stir in remaining flour 1/2 cup at a time until dough is smooth.

Knead 5 minutes. Let rise in a warm place until doubled, about 1 hour.

Preheat oven to 500°F. Oil a 10-inch round deep-dish pizza pan.

Press dough into pan, up the sides. Layer mozzarella slices evenly over dough.

Top with crumbled raw Italian sausage.

Combine crushed tomatoes, garlic, and basil; spread over sausage.

Sprinkle with Parmesan. Bake at 500°F for 15 minutes until crust is golden and cheese is bubbling.
