Pita Bread
Simple homemade pita bread — a basic yeast dough that rises slowly and bakes into light, slightly chewy rounds with a natural pocket. Great for dips, sandwiches, and wraps.

- 2 tsp active dry yeast
- 1 cup warm water
- 3 cup all-purpose flour
- 1 tsp salt

Dissolve yeast in warm water and let stand until foamy, about 5 minutes.

Sift flour and salt together. Make a well in the center and add the yeast mixture.

Work into a dough and knead several minutes until smooth. Cover with a damp cloth and let rise in a warm place for 3 hours.

Preheat oven to 350°F (175°C).

Divide dough into 6 equal portions and roll into balls. Pat or roll each into a 5-inch circle about ½ inch thick.

Place on an ungreased baking sheet. Bake 10 minutes until lightly golden. The pitas will puff slightly and form a pocket as they cool.
