Pistachio Filet Of Sole

  • 8 ½-inch thick sole fillets
  • 0.3 cup milk
  • 0.3 cup all-purpose flour
  • 1 0.3 cup finely chopped pistachios
  • 1 0.3 cup bread crumbs
  • 2 eggs, beaten
  • 4 tbsp butter
  • 1 0.5 tbsp vegetable oil

Instructions

    Whisk eggs and milk together in a shallow bowl. Place flour on a flat dish. Mix pistachios and breadcrumbs on another flat dish.

    Dredge each fillet in flour, then dip in the egg mixture, then press into the pistachio-breadcrumb mixture to coat.

    Heat half the butter and half the oil in a large skillet over medium-high heat. Let fat brown slightly before adding fillets.

    Cook about 3–4 minutes on each side until golden and cooked through.

    Cook remaining 4 fillets in remaining butter and oil. Serve with orzo or rice.
