Piri Piri
Emeril's piri piri — a Portuguese-inspired hot olive oil sauce with jalapeños, poblanos, and garlic, pureed smooth. Must age 1 week before serving.

- 1 0.5 cup olive oil
- 4 whole fresh jalapeño peppers, finely chopped (stems and seeds included)
- 2 whole fresh poblano peppers, finely chopped (stems and seeds included)
- 1 tbsp crushed red pepper
- 1 tsp salt
- 1 tsp freshly ground black pepper
- 1 tbsp garlic, minced
- 1 tbsp fresh cilantro, finely chopped
- 1 tbsp kosher salt

Combine olive oil, jalapeños, poblanos, crushed red pepper, salt, and black pepper in a saucepan.

Bring to a boil, reduce heat, and simmer for 4 minutes.

Remove from heat and stir in the minced garlic.

Using a hand-held mixer or blender, purée the sauce until smooth.

Allow the sauce to sit under refrigeration for 1 week before serving.

Just before serving, stir in chopped cilantro and kosher salt.
