Pineapple Fried Rice

- 3 cup cooked brown rice
- 0.5 cup frozen corn
- 2 carrots, peeled and grated
- 1 onion, diced
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 0.5 tsp ginger powder
- 1 tbsp sesame oil
- 3 tbsp soy sauce
- 0.3 cup green onion, sliced
- 0.5 cup ham, diced
- 2 cup pineapple, diced
- 0.5 cup frozen peas

In a small bowl, whisk soy sauce, ginger powder, and sesame oil and set aside. Preheat the griddle to high heat. Add oil to the hot griddle top. Add onion and garlic and sauté for 3-4 minutes. Add corn, carrots, and peas and stir constantly for 3-4 minutes. Stir in cooked rice, green onions, ham, pineapple, and soy sauce mixture and stir continuously for 2-3 minutes. Servings and enjoy.
