Pineapple-Cheese Casserole
Simple pineapple and cheddar casserole with a sugar-flour binding, buttery Ritz cracker crumb topping and a touch of pineapple juice. A classic Southern side.

- 20 oz canned pineapple chunks, drained (reserve juice)
- 1 cup sharp cheddar cheese, grated
- 0.5 cup granulated sugar
- 3 tbsp flour
- 0.3 cup butter, melted
- 1 cup crumbled Ritz crackers
- 3 tbsp pineapple juice
Instructions

Combine pineapple chunks, cheese, sugar and flour; mix well.

Melt butter and mix with cracker crumbs.

Spread pineapple mixture in baking dish. Spread crumb topping over it.
