Pimento Cheese Spread

Classic Southern pimento cheese spread — room-temperature Colby cheese mashed with diced pimentos and just enough mayo to hold it together. Best chilled overnight.

  • 1 lb Colby cheese, at room temperature
  • 2 oz jar diced pimentos, partially drained
  • 0.3 cup Kraft mayonnaise (or to consistency)

    Allow cheese to come to room temperature for 30 minutes. Mash with a fork or squeeze with clean hands until crumbly.

    Mix in the pimentos (do not use the entire jar unless you really like pimentos; add gradually to taste).

    Add mayonnaise a little at a time until the spread reaches the right consistency — it should hold together but not be runny. The color should be a light orange.

    Refrigerate for several hours or overnight to allow flavors to blend. Serve on crackers, bread, or celery sticks.
