Ingredients
Servings
6
- 1 lb Colby cheese, at room temperature
- 2 oz jar diced pimentos, partially drained
- 0.3 cup Kraft mayonnaise (or to consistency)
Instructions
- 1
Allow cheese to come to room temperature for 30 minutes. Mash with a fork or squeeze with clean hands until crumbly.
- 2
Mix in the pimentos (do not use the entire jar unless you really like pimentos; add gradually to taste).
- 3
Add mayonnaise a little at a time until the spread reaches the right consistency — it should hold together but not be runny. The color should be a light orange.
- 4
Refrigerate for several hours or overnight to allow flavors to blend. Serve on crackers, bread, or celery sticks.
