Picnic Potato Salad

A healthy vegetarian recipe for Picnic Potato Salad from God's Garden.

  • 4 c peeled and chopped potatoes
  • 1/4 c red peppers, diced
  • 1 c diced celery
  • 1/4 c minced onion
  • 1 T apple cider vinegar
  • 1 T Bragg Liquid Aminos
  • 2 t mustard
  • 1 avocado, mashed
  • 1 T Italian seasoning

Instructions

    Boil potatoes and cool.

    Add remaining vegetables and set aside.

    In a separate bowl place the ingredients for the dressing: apple cider vinegar, Bragg Liquid Aminos, mustard, mashed avocado, and Italian seasoning.

    Stir ingredients together and pour over potato mixture.

    Toss together lightly and chill before serving.
