P.F. Chang's Lettuce Wraps
Copycat P.F. Chang's famous minced chicken in hoisin-oyster sauce with shiitake mushrooms, bamboo shoots, and water chestnuts, served in crisp lettuce cups.
Ingredients
- 8 whole dried shiitake mushrooms
- 1 0.5 lb boneless skinless chicken, minced
- 5 tbsp oil
- 1 tsp fresh ginger, minced
- 2 clove garlic, minced
- 2 whole green onions, minced
- 8 oz bamboo shoots, minced
- 8 oz water chestnuts, minced
- 1 tbsp hoisin sauce
- 1 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tsp sesame oil
- 1 head iceberg lettuce, leaves separated into cups

Cover shiitake mushrooms with boiling water; soak 30 minutes, drain, remove woody stems, mince.

Mix cornstarch, sherry, water, salt, and pepper in a bowl. Add chicken and toss to coat.

Make cooking sauce: combine hoisin sauce, soy sauce, sherry, oyster sauce, water, sesame oil, sugar, and cornstarch.

Heat oil in wok or skillet over high heat. Add ginger, garlic, green onions, and optional dried chilis; sauté 30 seconds.

Add chicken; cook until no longer pink. Add mushrooms, bamboo shoots, and water chestnuts.

Add cooking sauce; stir-fry until sauce thickens. Serve with cellophane noodles on lettuce cups.
