- 2 cup unbleached all-purpose flour
- 2 tbsp toasted wheat germ
- 4 tsp baking powder
- 0.5 tsp salt
- 6 tbsp cold unsalted butter, cubed
- 0.3 cup grated sharp Cheddar cheese
- 0.8 cup buttermilk

Preheat the oven to 425°F (220°C). Butter a baking sheet.

In a food processor or mixer bowl, combine the flour, wheat germ, baking powder, and salt; pulse briefly to mix. Add the butter and cheese; process until the mixture resembles coarse meal.

Add the buttermilk and process until the dough just comes together, about 15 seconds. Do not overwork.

Turn the dough onto a floured board and let it rest for 5 minutes. Knead gently 3 times only, then pat into a circle ¾ inch thick. Cut out petite biscuits using a 1-inch biscuit cutter.

Place on the prepared baking sheet and bake in the upper third of the oven for about 10 minutes until puffed and golden. Serve warm.
