  • 2 cups Flour
  • 1/4 cup Sugar
  • 3 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 cup Milk
  • 1/3 cup Salad Oil
  • 1 Egg, slightly beaten
  • 1 tsp Vanilla

Instructions

    Line cups with a paper liner and grease bottom.

    Place flour, sugar, baking powder and salt into a large bowl.

  3. 3

    Measure milk in a 2 cup measure.

  4. 4

    Add oil and egg and beat with fork to mix well.

    Make a well in the center of flour mix.

    Pour in milk mixture all at once.

    Stir quickly with fork, just until flour disappears. Do not beat.

    The batter will be lumpy.

    Using ice cream scoop, quickly dip batter into muffin cups, filling each. Slightly more than half.

    Bake at 400° for 20 to 25 minutes.

    Loosen edge of muffins with a spatula-turn out.
